Can you explain a little more how this works? For instance the crunchy chicken cheese bake . would you be putting raw chicken covered in crunchy stuff and cheese in a dish and then freeze – – so then all you do is pull out and pop in the oven?

Sorry if this seems obvious to everyone but I am wondering how this works. Also do you have to defrost the food the nigth before or throw the frozen food in a the oven?

Gina, for most freezer meals the meat is cooked. So, you could cook your chicken in a pan or crockpot. Then cut/ shred. Later, you’d assemble your meals and freeze. You can even just freeze your meat if you’re short on time. Lastly, you’ll essentially just be reheating your freezer meals. Most noodle freezer meals don’t even need cooked noodles. Between freezer time and a little extra liquid it will soften on it’s own and heat when you put it in the oven at a later date. Hope this helps.

Oh, and most meals will thaw in 24 hours in the fridge, some overnight. Then, when you get home you can pop it in the oven. Since most items are cooked, when in a pinch you can thaw on the counter too.

Hey I was wondering how healthy your freezer meals are? My husband is diabetic and is trying to avoid a lot of gluten and unhealthy carbs, sugars, and over processed foods. I love the idea of freezer cooking and want to purchase your book. I think it would make such a difference in our home but I was wondering if it was possible to have freezer meals and still offer mostly nutritious dinners?

Hi Stefanie,

The freezer meals are prepared with mainstream families in mind and don’t include specific recipes that are Gluten Free or for diabetics. However, some of our recipes would be inherently Gluten free or be low in sugars, etc, we just don’t have it categorized as such.

We do offer full nutritional values on each recipe so you could view the recipes, it’s ingredients and nutrition to determine the fit for your families dietary needs. I hope that helps!
